Excellent Seafood Chowder (lactose reduced)

2 cans baby clams
6 slices bacon chopped
1 onion chopped
3 ribs celery chopped
2c. grated potatoes
1c lactose free milk
1 can coconut milk
1/2c white wine
1c chicken broth (optional? maybe just more wine??)
2 bay leaves
1/2t dried thyme
1/2c blend cream (or heavy cream for more richness)
1 lb. fresh haddock, cut into 1-2 inch pieces
1 lb. small scallops
1/4c chopped fresh parsley
Reserving juice, drain clams and set aside.
In big pot cook bacon, drain all but 1T fat off.
Add onion, celery and 1T water (or wine), cook until softened.
Stir in potato, cream, milk, coconut milk, wine, reserved clam juice,
bay leaf & thyme
Simmer about 15 min, until potato is soft and broth thickened
Stir in clams, fish, scallops and parsley.. Simmer until fish is cooked.
Add S&P to taste
